This recipe is an ultra simple one. Put some fresh or frozen berries into your second ferment, seal the lid, leave it on the counter for 24 hours and voila! You have delicious homemade soda.
BERRY BURST RECIPE
MAKES: about 4 cups
INGREDIENTS:
4 cups first ferment
1/2 cup mixed berries fresh or frozen
INSTRUCTIONS:
- Make the first ferment and leave the jar in a warm place for 24-48 hours.
- Strain the grains and add the ingredients to the swivel top bottle with the first ferment water kefir.
- Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
- Open slowly, strain and enjoy!
NEED TO KNOW:
It’s best if you squeeze the berries a bit before you add them to your second ferment so that the water kefir can penetrate them all the way through and make sure you eat them after you strain the ferment. They will be saturated with live probiotics.
