Pineapple Coconut Water Kefir Soda Recipe

With this recipe you don’t have to add any additional sugar as the water kefir will eat up the natural sugars in the coconut water and make the ferment.

Pineapple Coconut Water Recipe

MAKES: about 4 cups


1/4 cup water kefir grains

4 cups coconut water with no added sugar

1/2 cup finely chopped pineapple or 1/4 cup pineapple juice


  • Mix 1/4 cup water kefir grains into coconut water
  • Leave the jar in a warm place for 24-48 hours.
  • Strain the grains and add the pineapple juice to a swivel top bottle.
  • Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
  • Open slowly, strain and enjoy!


 Fermented coconut water is a probiotic powerhouse, teeming with beneficial bacteria that support gut health. Rich in electrolytes and enzymes, it aids hydration and digestion. The fermentation process eliminates all of the natural sugars from the ferment making it a healthy option for a person who is sugar free and wants the benefits of water kefir.

This recipe offers the option of incorporating pineapple juice during the second ferment process to achieve fizz. 

However, a second fermentation can be conducted without any juices to achieve effervescence, or the beverage can be consumed immediately following the first fermentation without carbonation. It's worth noting that in the absence of additional sugar during the secondary fermentation, the carbonation process may require extended time to develop fully.
