I love when people ask me questions.

It means that they are interested in improving their gut health and that’s my specialty. 🙂

Here is the low down.

The base of kombucha is black tea which means that it contains caffeine.

The beauty of water kefir is that it has no caffeine so if you want a caffeinated drink then kombucha is for you.

With that said, tea is not only black and caffeinated but it can also composed of herbs and spices and those are AMAZING to add to water kefir recipes!

Now you can add black tea into your second ferment no problem. It will work and give a nice flavor but don’t ever add it to your first ferment like you do when you make kombucha. You will confuse your grains and they won’t flourish. They will actually begin to disintegrate.

Herb teas on the other hand, contain chamomile, peppermint, berries, fruits etc. and make for lovely additions to your second ferment. You can tear the tea bag open and pour the leaves and fruit into your second ferment. Or in the case of loose teas like David’s Teas, you just add the combinations straight into your swivel top bottle.

Never add them to your first ferment. Your first ferment should only ever consist of water, sugar and water kefir grains.

Here are some links to some lovely water kefir recipes in which we used tea.

Leeza Zurwick

Leeza Zurwick is the Founder of Happy Gut and has a deep passion for living off the earth and using fermented food as medicine. After being gifted some water kefir grains, she found it difficult to find consistent information on how to brew water kefir and she found it challenging to source the right brewing supplies. Through extensive research, trial and error, Leeza developed simple recipes and systems to ensure success and delicious results. After drinking water kefir daily, she noticed a significant reduction in bloating, clearer skin and her immune system was strengthened enough to not get sick, despite working in classrooms full of germy kids! Leeza launched Happy Gut in 2017 and made it her mission to share the age old wisdom, simplicity and incredible health benefits of live, probiotic rich, fermented Water Kefir.
