Gingerbread Water Kefir Soda Recipe

Not only does molasses help our bodies but it also gives our little water kefir babies a boost and they love it! Unlike refined sugar, blackstrap molasses contains essential vitamins and minerals. B vitamins, calcium and magnesium all play a role in combating stress and anxiety, and they are found in blackstrap molasses. This recipe is robust in flavour and brimming with health benefits.

GINGERBREAD RECIPE

MAKES: about 4 cups

INGREDIENTS:

4 cups first ferment

1/4 tsp blackstrap molasses

1/4 tsp cinnamon or a cinnamon quill

5 Cloves

3 Cardamom pods

5 pieces candied ginger or 3 slices fresh ginger

INSTRUCTIONS:

  • Make the first ferment – mixing in 1/4 tsp blackstrap molasses and leave the jar in a warm place for 24-48 hours.
  • Strain the grains and add the remaining ingredients to the swivel top bottle with the first ferment water kefir.
  • Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
  • Open slowly, strain and enjoy!

NEED TO KNOW:

The vitamins and minerals in blackstrap molasses make the grains plump up but you have to be very sparing. You can easily over feed them and make them disintegrate.
