It’s a beautiful spring day at the Happy Gut Farm today!

I’m busy packing my suitcase as I head out to Toronto tomorrow to tape my Dragon’s Den episode at the CBC studios. Life is pretty exciting these days at Happy Gut!

This week’s recipe is an ultra simple one. Throw some fresh or frozen berries into your second ferment, seal the lid, leave it on the counter for 24 hours and voila! You have homemade soda. It’s honestly is that simple.

In the last few years, fresh, juicy, berries have become much more prevalent in grocery stores year round and with this recipe you can use either fresh or frozen mixed berries.

It’s best if you squeeze them a bit before you add them to your second ferment so that the water kefir can penetrate them all the way through and make sure you eat them after you strain the ferment. They will be saturated with LIVE probiotics!

BERRY BURST

Water Kefir Soda Recipe

Make the first ferment and leave the jar in a warm place for 24-48 hours.

Strain the grains and add the following to your second ferment.

1/2 cup Mixed berries fresh or frozen and pinched

Add to the green swivel top bottle with the first ferment water kefir.

Seal up the green swivel top bottle and leave it in a warm place for 24 hours for the second ferment.

Open slowly, strain and enjoy!

Refrigerate immediately and it can last there for up to 8 weeks before it turns to vinegar.
