And so the holiday season begins and my willpower goes out the door.

Sound familiar?

I work very hard all year to avoid sugar as much as possible but what is Thanksgiving without pumpkin pie or Christmas without After Eight mint chocolates?

I recently got myself incredibly worked up about Thanksgiving dinner and how I was going to avoid falling off the low carbohydrate and low sugar wagon.

After much deliberation and 3 a.m. stress, I decided that there will only be one Thanksgiving in 2018 and I should enjoy it.

I was getting WAY to worked up about something that I could eat and wouldn’t die if I did.

Having a bit of carbs and a bit of sugar was not going to send me to Emergency like a peanut allergy would.

The interesting part is that on Thanksgiving I had a bit of everything on my plate and a bit of pumpkin pie but my taste buds have changed with living the low sugar lifestyle and these days I can’t tolerate anything sweet.

A couple of bites of pie and I was good.

Success! (in my opinion)


My stomach immediately went into protest mode and got very upset.

My stomach was angry but my mind was at ease because I didn’t miss out on the good food.

If it ain’t one thing, it’s another!

Monday was a new day and I had no problem going back to my low carb lifestyle then.

Speaking of upset stomach, this week I wanted to feature a water kefir drink that tastes like After Eights (one of my favorite Christmas chocolates) and eases stomach discomfort.

The benefits of melding these three powerhouses together:

  • water kefir has over 30 billion probiotics to flush out bad bacteria from your digestive tract and introduce good bacteria
  • it has enzymes to break down your food quicker to avoid stomach discomfort if drank before a meal.
  • it is brimming with vitamin B12, B6, B1, magnesium, folate, vitamin K
  • the mint is well-known for its stomach-soothing properties thanks to the presence of a compound in peppermint oil called menthol, which helps relax the muscles in the digestive tract to provide relief.
  • the Raw Cacao (unprocessed form of chocolate) is a superfood that contains antioxidants, magnesium, iron and fiber.

Who knew that pairing mint, chocolate and water kefir would make for a Christmas party in your gut! 😉

It’s also a great cure for those after Christmas party hangovers because it eases nausea and boosts electrolytes.

How can you go wrong???

After Eight Chocolate Mint Water Kefir Soda

10-15 leaves of fresh mint

mull the leaves to activate the oils prior to adding to the second ferment

*you can also use 2 drops of food grade peppermint essential oil, 1/4 tsp. peppermint extract or dried peppermint leaves

3 tsp raw cacao or cocoa powder

Add to your Happy Gut swivel top bottle with your first ferment. 

Seal up the bottle and leave it in a warm place for 24 hours for the second ferment.

Open slowly and enjoy!

The second ferment on this recipe may take a bit longer because it doesn’t have added sugar from a fruit or juice to build the CO2 very quickly.

Place the second ferment bottle right against your salt lamp and it will give it lovely heat and energy to make the drink nice and fizzy.
