Next up in probiotic pop series is our copycat 7UP recipe. We use lemon and lime zest to elevate the citrus in this recipe so it really shines. Candied ginger adds a little something extra to refreshing and nostalgic soda.
MAKES: ABOUT 4 CUPS
4 cups of first ferment
1 tsp of a mixed lemon and lime zest.
1 tbsp lemon juice
1 tbsp lime juice
5 pieces candied ginger
Make the first ferment and leave the jar in a warm place for 24-48 hours.
Zest the lemon and lime to make up about 1 tsp of mixed zests.
Add zests, candied ginger and juices into a clean and sanitized swivel top bottle.
Strain the grains, and pour the first ferment into the swivel top bottle.
Seal the bottle, and gently tip upside down 2 or 3 times to ensure ingredients are well mixed.
Leave the bottle in a warm place for 24 hours for the second ferment.
Once desired carbonation is reached, refrigerate until well chilled.
*** Since lemons and limes have such low sugar content, it may take longer to get fizz in the second ferment.
