Spring Brewing

You are going to notice some changes in your brews as the temperatures in your homes begin to fluctuate in this spring weather. Water kefir grains can get cranky with temperature fluctuation, but not to worry! If your grains have been slow (like ours have been for the past few weeks), its nothing you are doing wrong. They will pick up speed as the temperature warms up again.

*Trouble Shooting Tip: Try putting your grains into the oven with the light on to keep them a consistent temperature. This should help speed up the process if your home is too cool.

Exciting News From Happy Gut!

We are so excited to introduce a new team member!

I have been watching this woman on social media for a while, and these six heavenly words sealed the deal for me: Milk tea cocktail with cinnamon and cayenne meringue.

Polya, a talented food and drink creator has a knack for using both her words and her photos to pull people in. She has been cooking her entire life, but it was not until her friends took it upon themselves to create an Instagram page for her recipes that things really began to take off.

I am delighted by the way that she takes a recipe and adds new or unexpected ingredients to make it unique and delicious.

Her daily food blogging makes me want to drive to her house, ring her doorbell and sit down at her table for a meal!

Unfortunately, she is 4 hours away in Kelowna BC, so that makes it challenging.  Luckily, her recipes are quick and easy for anyone to prepare at home.

I decided to reach out to her on Instagram [Follow her @polkat_ivanovna], to tell her I have been stalking her page for quite some time and to ask her to join the Happy Gut team! She immediately said yes and is now our drink and fermented food developer, and nutrition and health advisor.

Welcome to Happy Gut Polya!

 April is Immunity Month!

Spring time is upon us, and with the warmer weather comes colds, flus and allergies. Nobody enjoys being stuck inside when the sun is shining, so we want to help you boost your immunity and decrease your allergy symptoms!

Water kefir on its own is a great way to help boost your immune system to keep you healthy and energized, but did you know that you can also add ingredients to your second ferment to supercharge the effects?

Try our top 5 favorites:

The most common immune booster, bringing loads of vitamin C, and is key for fighting infections and viruses. Grapefruits, oranges, lemons and limes are all perfect for adding a delicious tangy brightness to water kefir.

*FUN FACT! Your body doesn’t store vitamin C, so adding it to your daily diet is crucial to keep your immune system healthy and strong!

A great booster and fighter. Ginger helps decrease symptoms of nausea, helps reduce inflammation, joint pain, and may also possess cholesterol lowering properties. Ginger has a warm, spicy taste, that is described as peppery with floral notes. It brings out the sweetness of fruits it is paired with, and really enhances vitamin C rich foods like citrus.

Most people don’t realize that spinach is rich in vitamin C! It is also packed with numerous antioxidants and beta carotene which can help with the infection fighting ability of our immune systems. It is healthiest when cooked as little as possible, and has a mild, subtly sweet flavor so it makes a great addition to any water kefir based smoothie/juice blend. Give it an extra spin in your blender, because the light heat created will help to release its vitamin A!

This bright yellow, bitter spice is best known for its anti-inflammatory properties, and the high concentrations of curcumin (which gives tumeric its beautiful, golden color), can also help decrease muscle pain after exercise (another perfect ingredient for spring, when we all want to get outside and play in the sunshine). Fresh tumeric is best (we keep ours in the freezer and grate it into our smoothies and ferments), but you can also use powdered tumeric in smaller quantities as it is more concentrated in flavor. Tumeric is also fantastic for aiding in digestion.

Another fruit loaded with vitamin C and bromelain, which is an enzyme that helps improve digestion, and also has anti-inflammatory effects. Pineapples are also fairly rich in manganese, B vitamins, folate and fibre, making the pairing with water kefir a supercharged nutritional smoothie! Pineapple adds a burst of  flavor and is readily available in the produce section or the freezer aisle. We love the convenience of fresh-frozen pineapple as it maintains all of its nutrients and flavor, and keeps fresh for months!

Super Food of the Month

Stinging Nettles (Urtica dioica)

With the start of spring comes the return of amazing plant medicines!

Nettles are well-known for the sting they can cause if brushed up against in the wild, but did you know that these amazing plants are also incredibly beneficial for treating a number of conditions? It has been used as medicine since as early as Ancient Greece.

While the prickly, stinging sensation from fresh leaves can be a little bothersome (wear gloves when handling it to eliminate the issue), nettles are  a perennial flowering plant with powerful healing properties. To name a few:

*anti-inflammatory- nettles assist with swelling and inflammation of muscles and joints, especially with osteo and rheumatoid arthritis. Nettles are often used along side NSAID medications so that patients can decrease the amount that they take. This is beneficial as NSAIDs can cause stomach irritation. Both ingesting and directly applying nettles to aching joints has been shown to decrease symptoms.

*allergy relief- nettles contain a natural antihistamine which is excellent for allergies or breathing-related problems, making it the perfect addition to a spring diet.

*Urinary and prostate disorders- nettles can aid in the recovery from UTIs and Benign Prostatic Hyperplasia (BPH/enlarged prostate).

*Nettles are rich in serotonin, histamine (which sounds backwards, but is the main reason they decrease allergy symptoms) and ascetylcholine (a neurotransmitter)

Nettles can be prepared in tea, sauteed like spinach (the flavor is very similar), used as a topical in a poultice, ointment or salve, or dried and put into capsules for easy ingestion. We love making nettle pesto, nettle soups, and even using nettles in our second ferment water kefir!

What do you do to stay healthy and energized when spring arrives?

 Sunshine Immunity Smoothie

One of our favorite spring smoothies! This blend combines the most powerful immune boosting, and anti-inflammatory ingredients into one delicious beverage!

2 tablespoons honey (a natural immune booster, anti-inflammatory and anti-histamine),

1-2 tablespoons fresh grated ginger (keep it in the freezer for easy use),

3/4 teaspoon ground tumeric (1 teaspoon fresh grated),

1 cup loose spinach (if you use a bullet blender, it should be half of the blending cup),

1/2  of a fresh squeezed lemon or 3 tablespoons lemon juice

1 cup first ferment water kefir

5 chunks fresh or frozen pineapple.

Add everything into a blender and blend until smooth and frothy! Leaving the “pulp” in adds beneficial fibre to your diet, and will keep you full longer, however if you dislike pulp, simply pour the mix into your glass through a mesh strainer, for a fresh, healthy water kefir juice!
