I get so excited when people ask me about water kefir since being a Master Water Kefir Brewer is my career. The biggest thing that I love about water kefir is that it is a super low commitment. You can stop it and start it at any time and that is actually how it it meant to be used. If you want to go on a holiday or just plain take a break from brewing it, all you have to do is put the grains into a jar of water and put them into the fridge and they can sit there for up to three months before they need to be fed again. As long as you can see the grains, they are ready to ferment. There is no such thing as dead grains. That is why they have survived for centuries. If you are having a tough time getting your Fizz On, it is because of something you are doing wrong, not the grains.
