Minty Matcha Lime Water Kefir Soda Recipe

Balanced with fresh mint and lime juice, this drink has a zing of ginger and reminds you of sitting on a bright and breezy patio. Matcha is a high-grade, finely ground, concentrated green tea has been traditionally used in Japanese tea ceremonies for hundreds of years. Learn more about it here.


MAKES: about 4 cups


4 cups first ferment

1/4 cup fresh squeezed lime juice or 2 drops food grade essential oil

5 leaves fresh mint

3 slices fresh ginger or 5 pieces candied ginger

4 tsp matcha


  • Make the first ferment and leave the jar in a warm place for 24-48 hours.
  • Strain the grains and add the ingredients to the green swivel top bottle with the first ferment water kefir.
  • Seal up the green swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
  • Open slowly, strain and enjoy!
