Your directions are excellent, and videos even more awesome and helpful. Full disclosure, I also viewed veganlovie and culturesforhealth videos as well for guidance. Instructions were pretty similar.
As a newbie to kefir water-making, here’s what I found:
Minerals are key. Using boiled tap water, I added a pinch of black salt (kala nemak) and it worked great. My 1st ferment smells yeasty at 48 hrs. AND I get real fizz (and plenty of pop!) after 3 day in-bottle 2nd ferment. (Without the black salt, my first couple batches were tasty but flat.)

I have been a Happy Gut consumer for a couple of years. I love it! I am a type 1 diabetic and was skeptical at first as I didn’t know if it would raise my blood sugar. I did a test and voila… It did not!! I make sure that I keep my water kefir on the counter and the fermentation eats up the sugar. I consume my water kefir within 3 days and start another. It gives me so much energy and my husband loves it! My granddaughters, Sadie and Cora love the “pop” and all the different flavors. I make lemonade, pineapple, grapefruit/blueberry. I have been fermenting since I was young: sauerkraut, cucumbers, mushrooms and more. Water kefir is the special sweet that I love so much.
I purchased the product after watching the DD episode. With little expectation to be honest. I was going to gift it to someone but the package said the grains had to be used fairly quickly (within two weeks) so I decided to try it myself.
Now, a month in, I forgot to start my current batch fermentation and have run out and in panic mode! I LOVE this stuff! I can’t keep up with how much is consumed in this house. and will have to double my recipe.
It’s delicious. So far I’ve made mango orange (candied mango and orange juice) I’m SO glad I didn’t gift this away and kept it for myself.
I HIGHLY recommend this. It’s not messy, it’s super easy (I had doubts, but look at me!) and the taste is as good or better than store bought fermented drinks. And I know what’s in it!

These happy little grains worked well right away. It was my first time fermenting kefir, and by my second batch it was nice and bubbly. I’m a few weeks in and they seem foolproof so far!
My favourite second ferment recipe is 1/2 cup chopped frozen peaches and a few slices of fresh ginger. But I use cheap apple juice when I’m in a hurry and it works great too! I never liked kombucha, so I’m happy to have this as an alternative.

I checked out a number of companies selling the grains but wanted to support a relatively local small business, and I’m so glad I chose Happy Gut. I was a little hesitant initially, measuring precisely but wondering if the end result was as it should be. I’ve been experimenting with different fruits on the second ferment and have produced some pretty flavourful combinations.
Fermenting is a new hobby to me and after looking around Happy Gut seemed like the best provider of water kefir grains—plus they’re Canadian. The grains work well, and I have a fermented drink inside of four days, unlike with the weeks-long slog of kombucha making (no shade, kombucha). The grains haven’t multiplied yet but that’s probably because the atmosphere is still a bit chilly. My drinks are carbonating, so I’m not worried. I’ve tried some standard flavour combinations (mango passionfruit, citrus, pineapple) and some pretty out there ones (pine lemon, anyone?), with even more ideas sparking after reading the Happy Gut recipe book. Customer service is friendly, and as a copywriter I appreciate the laidback, friendly, optimistic tone of their communications. The only change I would make to the whole process is to include a tracking number on the shipped grains, but the shipping itself was pretty quick, so I can’t complain.
Got the grains and have already made my first batch! Love it so much!
I live in Quebec. I already know water kefir. I bought these grains alive, but I was worried they would arrive in poor condition given the 7 day summer transport across Canada. However, as soon as they arrived, I immediately made a first fermentation. 24 hours later I had lots of little bubbles in my jar. I filtered and made a second fermentation. Less than 24 hours later, I have an excellent result. I am very satisfied!
