It may sound a little redundant with the trend towards sustainability and going ‘back to the earth’ but there really honestly is nothing like home made food and drinks. The lower cost, the better taste, the higher quality, the improvement in health, the time you share while making, drinking or eating it with your loved ones and the rewarding relationship between you and your food and drinks make it something you simply can’t live without.
If your grains are beginning to multiply like crazy and you are looking to share the amazing benefits of water kefir with your family, friends and coworkers, then you are ready to make bigger batches of brew. Another big trend currently is to serve water kefir at a party as a non alcoholic alternative.
Basic first ferment recipe- 1/4 cup grains * 1/4 cup sugar * 4 cups water
Next step up – 1/2 cup grains * 1/2 cup sugar * 8 cups water
Bigger Batch – 3/4 cup grains * 3/4 cup sugar * 12 cups water (perfect for gallon sized glass jar)
Extra large batch – 1 cup grains * 1 cup sugar * 16 cups water
Always remember that water kefir is not necessarily something that a person needs to make in large batches.
Unlike Kombucha, which takes 2 weeks to brew, water kefir only takes 48 hours before a fresh batch is ready. You don’t really need to make copious amounts at once. But with that said, once you make the water kefir and fill it into a bunch of bottles, you can store it in the fridge for up to 8 weeks so you don’t have to have the hassle of making it so often. It makes it simpler to grab and go.
Water kefir is such a beautiful ferment to make because you can stop and start anytime. Just put the grains into plain water into the fridge and they can sit in dormancy for up to 3 months before they need to be fed again.
No wonder I love those little guys so much!

This post is written in Canada with Love and Good Intentions,
Leeza Zurwick is the Founder of Happy Gut and has a deep passion for living off the earth and using fermented food as medicine. After being gifted some water kefir grains, she found it difficult to find consistent information on how to brew water kefir and she found it challenging to source the right brewing supplies. Through extensive research, trial and error, Leeza developed simple recipes and systems to ensure success and delicious results. After drinking water kefir daily, she noticed a significant reduction in bloating, clearer skin and her immune system was strengthened enough to not get sick, despite working in classrooms full of germy kids! Leeza launched Happy Gut in 2017 and made it her mission to share the age old wisdom, simplicity and incredible health benefits of live, probiotic rich, fermented Water Kefir.
Happy Gut is proud to be a Social Enterprise that employs people with disabilities.
