If you are on a Keto diet and having a hard time finding a healthy sparkling beverage, water kefir may be right for you. Water kefir is simple to make and provides you with the fizz you crave. A one cup serving is 2 carbs or less and your gut will get the benefits of over 30 billion live probiotics, vitamins and minerals.
KETO WATER KEFIR SODA
MAKES: about 4 cups
4 cups tepid tap water that has been boiled
1/4 cup water kefir grains
1/2 tsp. stevia
2 tsp coconut sugar
Stir it all together with a wooden spoon and place the jar in a warm spot for 48 hours.
Strain the grains into the strainer as the liquid pours into the funnel on top of the swivel top bottle. Add 1/4 cup of slightly mashed blueberries, blackberries or raspberries.
Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment. Since you are not using traditional sugar, it may take longer for the CO2 to build.
Open slowly, strain and enjoy!
NEED TO KNOW:
We use the brand Sweet Leaf stevia and it doesn’t produce a harsh after taste like some stevia brands are known to do.
The addition of the coconut sugar does not count as carbs because it will get eaten up by the grains during the fermentation process. The purpose of adding the coconut sugar to the ferment is to give the grains a boost of vitamins and minerals in order to make them thrive.
