Pumpkin Spice Water Kefir Soda Recipe
We decided to jump on the PS train and are we ever glad we did! Amazingly enough, Pumpkin Spice soda is actually very tasty, not to mention very good for you. Let us know what you think of it.
Makes: about 4 cups
4 cups first ferment water kefir
1/4 cup pumpkin puree
1/2 teaspoon pure vanilla extract (we love Mexican vanilla like this one.)
1/2 teaspoon all spice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon clove
*Alternatively you can purchase a pumpkin spice blend at most local grocers and add 1 tsp*
Make the first ferment and leave the jar in a warm place for 48 hours.
Mix pumpkin puree, vanilla and spices together in a bowl, add 1/2 cup of first ferment to mixture.
Pour mixture into swivel top bottle, add more first ferment to make pouring easier.
Strain the grains and pouring remaining first ferment into bottle.
Seal the bottle and leave the pumpkin soda in a warm place for 24 hours for the second ferment.
Open slowly, strain and enjoy!
