Apple Blackberry Soda Recipe

Bask in the late summer weather by enjoying these two complimentary flavours of apple and blackberry that beckon the beginning of fall.
MAKES: about 4 cups
INGREDIENTS:
4 cups first ferment water kefir
4-6 blackberries, fresh or frozen, preferably organic
1/4 cup fresh pressed apple juice, preferably organic
INSTRUCTIONS:
Make the first ferment and leave the jar in a warm place for 24-48 hours.
Add fresh pressed apple juice to a clean, swivel top bottle.
Add blackberries into the bottle one at a time, squishing them slightly to pop the berry and allow the juice to run.
Strain grains, and add the first ferment to the bottle with the apple juice and blackberries.
Seal up the swivel top bottle, and leave it in a warm place for 24 hours for the second ferment.
Refrigerate until well chilled.
Open slowly, strain and enjoy!
NEED TO KNOW:
We like using organic berries whenever possible to avoid pesticides. If organic is not possible, make sure you have rinsed your berries well.
This recipe has more volatile fruit sugars in it than our average recipes. Make sure to burp the bottle every 12 hours to avoid an overflow from over-carbonation.
