Fermentation is a natural process where microorganisms like bacteria and yeast convert sugars into alcohol or acids. Why Water Kefir?
Water kefir is a probiotic-rich fermented drink made from water, sugar, and water kefir grains. It's a fantastic choice for beginners due to its simple ingredients and straightforward process. Plus, it's dairy-free, making it an excellent alternative for those with lactose intolerance.
Getting Started with Water Kefir
Here's a step-by-step guide to brewing your first batch of water kefir:
Ingredients and Equipment:
- Water kefir grains
- 4 cups of unfiltered tap water
- 1/4 cup of sugar
- A jar
- A wooden spoon
- A nylon strainer
- A swivel-top bottle for secondary fermentation
Step 1: Prepare the Sugar Water Bring 4 cups of unfiltered tap water to a boil, then pour it into a jar. Stir in 1/4 cup of sugar (1tbs coconut sugar and 3 tbsp cane sugar) with a wooden spoon until fully dissolved. Let it cool to room temperature.
Step 2: Add the Grains Add the water kefir grains to the cooled sugar water. Stir lightly and cover the jar with a cloth or lid that allows air to flow while keeping out insects. Place the jar in a warm spot (20-25°C or 70-75°F) for 24 hours for the initial fermentation. A salt lamp works best for putting your ferment up against and keeping it consistently warm night and day.
Step 3: Strain the Grains After 24 hours, strain the grains using a nylon strainer and discard the liquid. The grains are now acclimatized to your specific water and environment and ready for the main fermentation.
Step 4: Main Fermentation Repeat the process of preparing sugar water and adding the grains. This time, leave the mixture to ferment for 48 hours in the warm spot. After this period, strain out the grains. You can either enjoy the water kefir as is or proceed to a second fermentation for flavor and carbonation.
Step 5: Flavoring and Carbonation For the second fermentation, add 1/4 cup pineapple juice to a swivel-top bottle. Funnel the water kefir into the bottle, seal it, and let it sit on the counter for 24 hours. "Burp" the bottle every 12 hours to release excess carbonation and prevent overflow.
Step 6: Chill and Enjoy After 24 hours, if you’re satisfied with the carbonation, transfer the bottle to the fridge. Once chilled, gently rock the bottle and open it. Pour yourself a glass and enjoy the fizzy, flavorful water kefir. Don’t forget to rinse your equipment and start the process again for your next batch!
