After Eight Chocolate Mint Water Kefir Soda Recipe

This water kefir recipe tastes like After Eights and eases stomach discomfort. Raw Cacao (unprocessed form of chocolate) is a superfood that contains antioxidants, magnesium, iron and fibre. Mint is well-known for its stomach-soothing properties thanks to the presence of a compound in peppermint oil called menthol, which helps relax the muscles in the digestive tract to provide relief. Who knew that pairing mint, chocolate and water kefir would make for a Christmas party in your gut!

CHOCOLATE MINT RECIPE

MAKES: about 4 cups

INGREDIENTS:

4 cups first ferment

10-15 leaves of fresh mint or 2 drops of food grade peppermint essential oil, 1/4 tsp. peppermint extract or dried peppermint leaves

3 tsp raw cacao or cocoa powder

INSTRUCTIONS:

  • Make the first ferment and leave the jar in a warm place for 24-48 hours.
  • Strain the grains and add the ingredients to the swivel top bottle with the first ferment water kefir.
  • Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
  • Open slowly, strain and enjoy!

NEED TO KNOW:

The second ferment on this recipe may take a bit longer because it doesn’t have added sugar from a fruit or juice to build the CO2 very quickly. Placing the second ferment bottle right against your salt lamp and will give it lovely heat and energy to make the drink nice and fizzy.

Mull the mint leaves to activate the oils prior to adding to the second ferment of the chocolate mint water kefir.
