Pineapple and Ginger Water Kefir Soda Recipe

This juicy, tropical-inspired pineapple ginger water kefir soda recipe is best accompanied by a drink umbrella and beach chair! Sweet, tangy pineapple meets the earthy spice of ginger creating a lush libation that will become your new go-to soda flavour.
MAKES: about 4 cups
INGREDIENTS:
4 cups first ferment water kefir
1/4 cup fresh pressed, no sugar added pineapple juice
10 pieces of candied ginger or 1 tbsp chopped fresh ginger
INSTRUCTIONS
1. Make the first ferment and leave the jar in a warm place for 24-48 hours.
2. Add ginger and pineapple juice to a swivel top jar
3. Strain grains, and add first ferment water kefir
4. Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
5. Open slowly, strain and enjoy!
NEED TO KNOW:
Pineapple juice can be volatile to work with because of it’s sugar content. Always make sure to use no-sugar-added juices when flavouring. We suggest this recipe when you are just starting out with making water kefir.
Burp the bottle after 12 hours of fermentation to avoid over carbonation. If you think you may have an explosive bottle, cover the lid with a tea towel and open slowly in the sink. That way, if it does overflow, it won’t make a mess.
You can used fresh grated ginger instead of candied ginger if you don’t have it on hand. Just note it will be much stronger in flavour, so use sparingly until you have reached the desired taste.
