Raspberry Cream Soda Water Kefir Recipe

First in our probiotic pop series we have raspberry cream soda. We added the natural hue of raspberries to mimic the shocking pink colour we have come to know as cream soda. Traditional cream soda contains 66 grams of sugar and this probiotic rich soda recipe only contains 8 grams. There are no artificial colours here- just natural ingredients, great flavour and probiotic benefits in the raspberry cream soda recipe.

MAKES: about 4 cups

INGERDIENTS:

4 cups of first ferment

1 tsp vanilla extract

4-6 raspberries, fresh or frozen

INSTRUCTIONS:

Make the first ferment and leave the jar in a warm place for 24-48 hours.

Add the vanilla to a clean and sanitized swivel top bottle.

If using frozen berries, microwave for a few second to make them juicy and pulpy. If fresh, smash gently to release juice. Add to the bottle.

Strain the grains, and pour the first ferment into the swivel top bottle.

Seal the bottle, and gently tip upside down 2 or 3 times to ensure ingredients are well mixed.

Leave the bottle in a warm place for 24 hours for the second ferment. Burp every 8 hours to avoid an overflow.

Once desired carbonation is reached, refrigerate until well chilled.
