Blueberry Chamomile Water Kefir Soda Recipe

Blueberries are powerful anti-oxidants, high in vitamin C, potassium, and phytoflavinoids, making them a wonderful ingredient to help reduce inflammation. Chamomile has powerful anti-inflammatory properties and it works to protect the skin, lower stress levels, regulate sleep, and soothe menstrual cramps. These ingredients work together to create a soothing water kefir soda that can be sipped when you feel the need to relax.

BLUEBERRY CHAMOMILE RECIPE

MAKES: about 4 cups

INGREDIENTS:

1/4 cup wild blueberries – slightly squeeze them to infuse more flavour

1 tbsp dried chamomile flowers

1 tbsp fresh grated ginger or 5 small pieces of candied ginger

Optional: 1 tsp maple syrup – this helps to feed the ferment, and also adds a bit of extra flavour and sweetness.

1 tsp fresh lemon juice-if you like a bit of tang and an extra dose of Vitamin C

INSTRUCTIONS:

  • Make the first ferment and leave the jar in a warm place for 24-48 hours.
  • Strain the grains and add the ingredients to the green swivel top bottle with the first ferment water kefir.
  • Seal up the green swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
  • Open slowly, strain and enjoy!

NEED TO KNOW:

Refrigerate immediately. It can last there for up to 8 weeks before it turns to vinegar.
