Apple Sage Water Kefir Soda

Type: Soda, Autumn/Winter

Flavour: Fruity

Benefits: antioxidants, dairy-free, gut health, immunity

Apple recipes tend to head straight toward cinnamon, but fresh sage takes this one in a completely different direction.

This Apple Sage Water Kefir Soda is crisp, bright and lightly herbal. Fresh apple juice brings natural sweetness, lemon juice adds a clean tart finish, and sage gives the drink an earthy garden flavour that feels right at home in the fall.

It is not an apple pie kind of soda. It is fresher and less sweet, with just enough sage to make you stop and wonder why you have not paired these flavours before.

You can make this homemade water kefir recipe with freshly pressed apple juice for a smooth, easy-to-strain soda or use a finely diced crisp apple for more texture and a slightly softer apple flavour. Either way, it becomes a refreshing fermented drink with plenty of natural sparkle.

Why You’ll Love This Apple Sage Water Kefir Soda

Apple and sage are a beautiful seasonal pairing. The apple is familiar and naturally sweet, while the sage keeps the finished soda interesting and prevents it from tasting overly fruity.

Fresh lemon juice brightens everything and brings the flavours into balance. The result is crisp, fragrant and naturally probiotic-rich, making it a lovely alternative to the heavier spiced drinks of fall.

  1. Make the first ferment and leave the jar in a warm place for 24–48 hours.

  2. If using a whole apple, remove the core and dice the fruit finely.

  3. Gently press or rub the sage leaves between your fingers to release their fragrance without tearing them apart.

  4. Strain the grains and add the apple juice or diced apple, bruised sage leaves and lemon juice to a swing-top bottle with the first ferment water kefir.

  5. Seal the bottle and leave it in a warm place for 24 hours for the second ferment.
