These Berry Coconut Cream Overnight Oats are a creamy, make-ahead breakfast made with rolled oats, berries, seeds, and coconut cream water kefir yogurt. Naturally probiotic-rich and easy to prepare the night before, this nourishing breakfast is perfect for busy mornings.
Ingredients
1/2 cup almond or coconut milk
2 tsp chia seeds
2 tsp hemp seeds
1 tbsp maca or cacao powder
1 tbsp maple syrup, more or less to taste
1/2 cup large flake rolled oats, gluten free if possible
1/2 cup water kefir coconut cream yogurt, recipe here
1/4 cup frozen raspberries, blackberries, or blueberries
Directions
Add the almond or coconut milk, chia seeds, hemp seeds, maca or cacao powder, and maple syrup to a jar with a lid.
Stir well until everything is combined.
Add the rolled oats and stir again.
Spoon the coconut cream water kefir yogurt over top.
Add the raspberries, blackberries, or blueberries.
Close the lid and place the jar in the fridge.
Let the oats chill for 6-8 hours, or overnight, until the oats have absorbed the liquid and softened.
Stir before eating and enjoy cold, or let the jar sit at room temperature for a few minutes if you prefer it less chilled.
