Rosehip Lemon Honey Water Kefir Soda

Type: Soda, Autumn/Winter

Flavour: Fruity

Benefits: antioxidants, gut health, immunity, cold care, dairy-free

This recipe is a real taste of the Kootenays.

Wild rosehips grow all over our region, and many local foragers wait until after the first frost to pick them. By early November, the fruit has softened and is ready to become something delicious.

Rosehips are naturally rich in vitamin C and colourful plant compounds, making them a timely ingredient as we head into cold-and-flu season. They also create the prettiest coral-pink water kefir soda with a tangy flavour that tastes a little like a floral apple.

Fresh lemon brightens the rosehips, while a small amount of honey balances their tartness and helps build natural fizz during the second ferment. The finished soda tastes wonderfully wild and local, but dried rosehips work just as well for anyone who cannot forage their own.

Why You’ll Love This Rosehip Water Kefir Soda

This homemade water kefir recipe is bright, tangy and gently floral without tasting like perfume. The honey softens the sharper flavours, and the lemon keeps everything fresh.

It is also a beautiful way to use an ingredient that grows abundantly throughout the Kootenays. As the rosehips infuse, the water kefir develops a warm coral-pink colour that looks especially pretty poured over ice.

Rosehip Lemon Honey Water Kefir Soda is a tangy, coral-pink probiotic drink inspired by wild Kootenay rosehips. Fresh lemon and honey balance its slightly floral apple flavour, while dried rosehips make this seasonal homemade water kefir recipe accessible wherever you live.

Ingredients

  • 4 cups first ferment water kefir
  • ¼ cup fresh rosehips, halved, or 2 tbsp. food-grade dried rosehips
  • Juice of ½ lemon
  • 1 tsp. honey

Directions

  1. Make the first ferment and leave the jar in a consistently warm place for 24–48 hours.
  2. If using fresh rosehips, wash and halve them. Scoop out as many seeds and fine interior hairs as possible before adding them to the bottle.
  3. Add the fresh or dried rosehips, lemon juice and honey to a 1 L swivel-top bottle.
  4. Strain the grains and pour the first ferment water kefir into the bottle.
  5. Seal the bottle and leave it in a warm place for 24 hours for the second ferment.
  6. Open slowly, strain very well through a fine mesh strainer or several layers of cheesecloth, chill, and enjoy!
