This Spiced Fig Chai Water Kefir Soda was inspired by the warming spices found in chai. There is no actual tea in the recipe, so it is naturally caffeine-free. The figs do most of the sweetening, while the whole spices slowly infuse the water kefir during the second ferment.

Spiced Fig Chai Water Kefir Soda combines sweet, jammy figs with fragrant cardamom, cinnamon and cloves. This caffeine-free homemade water kefir recipe is naturally probiotic-rich, gently spiced and as cozy as pulling on your favourite warm sweater.

  1. Make the first ferment and leave the jar in a warm place for 24–48 hours.

  2. Wash the figs, remove the stems and gently mash the fruit.

  3. Lightly crack the cardamom pods with the back of a spoon or the flat side of a knife.

  4. Strain the grains and add the mashed figs, cardamom pods, cinnamon and whole cloves to a swing-top bottle with the first ferment water kefir.

  5. Seal the bottle and leave it in a warm place for 24 hours for the second ferment.

  6. Open slowly, strain, chill, and enjoy!
