Having daydreams about a tropical escape? This coconut smoothie with first ferment water kefir can take your tastebuds to a place under a palm tree. It’s rich, creamy and full of delicious coconut flavour.
Ingredients

½ cup first ferment water kefir
- 1/4 c. flaked or shredded coconut + a little more for garnish
- 1 cup coconut milk
- 1 large frozen banana
- 1 tsp. vanilla extract
Directions
Toast the coconut in a fry pan on low heat.
Keep stirring and watch it carefully as once it starts to brown, it toasts quickly
Put all ingredients in a high speed blender and blend until smooth.
Pour in a glass and sprinkle with toasted coconut.
Drink immediately
Recipe Note
If you don’t have coconut milk, you can use 1 heaping tbsp. coconut cream and 1 cup dairy or nut milk.
Feel free to add protein powder, hemp seeds or chia seeds to boost the protein content.
