This soda begins with a base of carefully fermented water kefir, a lighter, crisper cousin to traditional kombucha. This raspberry water kefir recipe is vibrant, easy, and delicious. Simply mash 1/2 cup raspberries, add them to the second ferment. The result is a fizzy, probiotic-rich drink bursting with flavour, perfect for warm days and a healthy gut!

Ingredients

  • 4 cups first ferment water kefir

  • ½ cup raspberries mashed 

  • 5 Hibiscus leaves to brighten colour - optional

  • Nylon strainer, Swivel-top bottle, Wooden spoon

Directions

  1. Make the first ferment and leave the jar in a warm place for 24-48 hours.

  2. Strain the grains and add the raspberries to the swivel top bottle with the first ferment water kefir.

  3. Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.

  4. Open slowly, strain and enjoy!
