Follow your first ferment process and remove the grains after 48 hours, but leave the brew on the counter for 5 days. Step 1: Prepare the Ferment
Bring 4 cups of unfiltered tap water to a boil.
Stir in ¼ cup sugar (1 tbsp coconut sugar and the remainder cane sugar) with a wooden spoon until completely dissolved.
Allow the mixture to cool to room temperature.
Pour into a clean glass jar.
Stir in ¼ cup water kefir grains
Loosely clasp the jar’s lid so that air can get in but bugs can’t.
Let sit in a warm location (20–25°C / 70–75°F) for 24 hours.
Step 5: Remove Grains & Ferment into Vinegar
After 48 hours, strain out the grains and set solely the liquid without the grains in it back into the warm location .
Loosely close the jar and let the liquid sit at room temperature for an additional 5–10 days.
Taste periodically—the longer it sits, the more sugars get eaten up and vinegar-like it becomes.
