Pineapple Plum Coconut Water Kefir Soda

Our team developed an electrolyte rich pineapple plum soda with fermented coconut water. It doesn’t require sugar for the first ferment because the water kefir grains consume the natural sugar that comes from the coconuts. Once fermented, the beverage has only has 1-2 grams of sugar and the electrolytes help our bodies with hydration.

Makes: about 4 cups

1/4 cup diced very ripe plums

1/4 cup diced pineapple

4 cups fermented coconut water

INSTRUCTIONS:

Make the first ferment with 4 cups of coconut water and 1/4 cup grains. Don’t add any sugar.

Leave the jar in a warm place for 24-48 hours.

Strain the grains and add the ingredients to the swivel top bottle with the first ferment coconut water kefir.

Seal the bottle and leave the mixture in a warm place for 24 hours for the second ferment.

Open slowly, strain and enjoy the pineapple plum soda!

NEED TO KNOW:

In order to have your grains grow and thrive, you must make regular water kefir after every 3rd ferment. The grains require the vitamins and minerals in the coconut sugar in order to stay strong and healthy.

HEAT INCREASES FERMENTATION ACTIVITY
Please ensure that you check your second ferment every 8-12 hours in the summer. Water kefir loves warm temps and can easily become overactive with an explosive fizz. It’s best to open your bottle over the sink with a cloth over the swivel top and unclasp slowly. Summer fermenting is unpredictable and it’s best to check on your ferments more often.
