A warm, spicy holiday ferment made with apple, cinnamon, and red chili peppers. This sparkling water kefir soda brings festive heat and billions of probiotics in every sip.
Ingredients

4 cups first ferment

1 cup chopped apples or 1/2 cup fresh pressed apple juice

2 red chili peppers

2 cinnamon sticks or 1/2 tsp cinnamon
Directions
Make the first ferment and leave the jar in a warm place for 24–48 hours.
Add chopped apple (or juice), red chili peppers, and cinnamon sticks into a clean swivel-top bottle.
Strain your water kefir grains, then pour the first ferment into the bottle using a funnel.
Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
Open slowly, strain and enjoy!
Recipe Note
Cinnamon sticks expand in liquid; choose thin ones so they don’t clog the bottle neck.
Leave the chili seeds in for a fiery kick—or remove them for a subtle, warming spice.
This ferment is naturally probiotic and rich in enzymes, antioxidants, electrolytes, and B vitamins thanks to the first ferment base.
