Lemon Lime Water Kefir Gummy Bears

Did you know it’s easy to make this childhood favourite right at home? Cut out unnecessary sugars and additives and still satisfy your candy craving with these delicious gummy bears!
YOU’LL NEED:
Silicone candy molds (available online)
Non-stick kitchen spray
Green food colouring (optional)
INGREDIENTS:
1/4 cup first ferment
2 tbsp. lemon juice
2 tbsp. lime juice
1 tsp. of lime zest
1 tsp. of lemon zest
2 tbsp. gelatin
INSTRUCTIONS
Begin by spraying the candy mold with non-stick spray. Use a paper towel to wipe inside the shapes and then wipe off any excess.
Heat the first ferment, fruit juices and zests on low heat. Use a thermometer to ensure the tempurature doesn’t go over 90 degrees (if it does, it will kill off the probiotic cultures. It will still work, but won’t have the fermented benefit anymore)
Add one drop of green food colouring, and sprinkle gelatin evenly over the liquid once it begins to warm. Whisk the ingredients thoroughly until the gelatin dissolves. Keep the saucepan on the element as you do this, because the mixture will get thick once it cools down. Once dissolved, strain the mixture into a bowl to remove the zest, or if you prefer, leave it in.
Put the mold on a plate or cutting board so it’s easier to move once it’s filled. Using a dropper or a measuring cup with a spout, pour the candy mixture into the molds. You should have enough to make several sheets, depending on the size of the mold.
Put the mold in the fridge for at least 30 mins. Then, test the gummy bears. They should be solid. If they’re not, leave them in longer. Store in the fridge for up to a week.

Over time, gummies begin to shrink in the fridge.
