Pineapple Plum Coconut Water Kefir – A Naturally Hydrating Electrolyte Soda
Looking for a way to hydrate and refresh without reaching for sugary drinks or artificial electrolyte mixes? This Pineapple Plum Coconut Water Kefir Soda is a tropical, tangy, and totally nourishing solution. Developed by the Happy Gut team using fermented coconut water, this bubbly soda is rich in natural electrolytes, low in sugar, and packed with probiotic power.
Fermenting coconut water with Happy Gut water kefir grains means you don’t need to add any sugar. The grains consume the natural sugars found in coconut water during fermentation, leaving you with a lightly tangy, fizzy drink that contains only 1–2 grams of sugar per cup. Add in ripe pineapple and juicy plums for a second ferment that delivers flavour, gut-friendly goodness, and hydration in every sip.
It’s perfect after a workout, on a hot summer day, or any time you want a beverage that supports your electrolyte balance, digestion, and energy levels — without the crash that sugar or caffeine can lead to.
Why It Works:
- Coconut water provides natural electrolytes like potassium and magnesium
- Water kefir introduces live probiotics and enzymes for gut health
- Pineapple + plum offer vitamin C, antioxidants, and a tropical-tart kick
- Naturally low in sugar and made with whole-food ingredients
Heads up: while water kefir grains can happily ferment coconut water for a short time, they still need to return to a traditional sugar-based brew every few batches to stay healthy. Make regular water kefir with coconut sugar after every third ferment to keep your grains strong and thriving. Have questions about this? Email our brewer at hello@happygutpro.com
And remember, summer fermentation moves fast. Coconut water ferments quickly in heat, so check your second ferment every 8–12 hours. Always open your bottle carefully over the sink with a towel over the top in case the bubbles go wild.
This hydrating soda is functional, flavourful, and one more reason to love fermenting with Happy Gut!

Our team developed an electrolyte rich pineapple plum soda with fermented coconut water. It doesn’t require sugar for the first ferment because the water kefir grains consume the natural sugar that comes from the coconuts. Once fermented, the beverage has only has 1-2 grams of sugar and the electrolytes help our bodies with hydration.
Ingredients
-
1/4 cup diced very ripe plums
-
1/4 cup diced pineapple
-
4 cups fermented coconut water
-
Glass jar, swivel-top glass bottle, nylon strainer, wooden spoon
Equipment
Directions
Make the first ferment with 4 cups of coconut water and 1/4 cup grains. Don’t add any sugar.
Leave the jar in a warm place for 24-48 hours.
Strain the grains and add the ingredients to the swivel top bottle with the first ferment coconut water kefir.
Seal the bottle and leave the mixture in a warm place for 24 hours for the second ferment.
Open slowly, strain and enjoy the pineapple plum soda!
Recipe Note
In order to have your grains grow and thrive, you must make regular water kefir after every 3rd ferment. The grains require the vitamins and minerals in the coconut sugar in order to stay strong and healthy.
HEAT INCREASES FERMENTATION ACTIVITY
Please ensure that you check your second ferment every 8-12 hours in the summer. Water kefir loves warm temps and can easily become overactive with an explosive fizz. It’s best to open your bottle over the sink with a cloth over the swivel top and unclasp slowly. Summer fermenting is unpredictable and it’s best to check on your ferments more often.
