LEMON CAYENNE GINGER RECIPE
MAKES: about 4 cups
4 cups first ferment
1/4 cup lemon juice
5-10 cubes candied or fresh ginger
Pinch of cayenne pepper
Sprig of fresh lemon balm or mint
- Make the first ferment and leave the jar in a warm place for 24-48 hours.
- Strain the grains and pour the water kefir into the swivel top bottle. Add the flavouring ingredients.
- Seal the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
- Open slowly, strain and enjoy!

The water kefir eats up the natural sugars from the lemons and the ginger. The cayenne and the ginger boost your body by making your inner temperature rise.
Refrigerate immediately. Burp bottle occasionally to release excess CO2. Water kefir can last up to 8 weeks in the fridge.
