What is water kefir?

Water kefir is a naturally fermented carbonated beverage made with water kefir grains, water and sugar. Those grains contain communities of bacteria and yeasts that work together during fermentation.

As they ferment the brew, the cultures consume sugars and produce organic acids, carbon dioxide and other fermentation metabolites. The result is the lightly tangy, naturally bubbly drink inside every Happy Gut can.

Because Happy Gut Water Kefir is alive and naturally fermented rather than processed like conventional soda, flavour and carbonation can vary slightly from can to can. That natural variation is part of the process.
