Water Kefir Vinegar Blackberry Vinaigrette

Sometimes we forget about the jar of fermenting water kefir left on the kitchen counter for too long. The kefir can turn to vinegar on its own so don’t toss it out. It’s still good as a probiotic-rich vinegar, and can be made into a vinaigrette. Pair it with your favourite salad, or our apple walnut salad with goat cheese.


Yields: 2 1/4 cup of dressing


1 1/2 cup fresh, washed blackberries, preferably organic.

1/2 cup extra virgin olive oil

1/4 cup water kefir vinegar

2 tbsp balsamic vinegar

1 garlic clove

1 tsp dijon mustard

1/4 tsp salt

Fresh cracked pepper to taste


Blend all ingredients in a high-speed blender until smooth and creamy. Add salt, pepper or more vinegar to suit your taste preferences.
